In June, star chef David Burke visited refugee farmers at the International Rescue Committee’s New Roots garden in the Bronx where he improvised a gourmet lunch using herbs and greens gathered from the farm. He dubbed the medley of shrimp, tomato and peach “On the river, on the fly.” It was accompanied by herbs and tossed with Chef Burke’s signature vinaigrette.
