It's a scorching first day of summer in New York City, but down by the Bronx River the New Roots Farm at Drew Gardens is a green oasis.
The community farm, one of many the International Rescue Committee supports across the United States, is a place where refugees who have fled war and persecution can grow nutritious food for their families and plant new roots in their adopted neighborhoods.
Star chef David Burke visited the refugee farmers at Drew Gardens today and improvised a gourmet lunch with herbs and greens gathered from the farm. He dubbed a refreshing medley of shrimp, tomato and peach "On the river, on the fly." It was accompanied by basil, fennel, lemon balm, shisho, rainbow Swiss chard, mustard greens, garlic and purple bok choy — all tossed with Chef Burke's zingy signature vinaigrette.
One IRC colleague who tried it declared it "Delicious!!" Here are a few quick pics she shared from her iPhone after lunch:
